To roast the garlic: put a head of garlic in a small square of tin foil, drizzle with some olive oil, wrap and place on the baking sheet to roast with the other veggies. I roasted these veggies at 400 degrees. I cooked the onions for 15 minutes and the other veggies for 30-45 minutes. You want to see a nice "blister" on all sides of your pepper and your garlic head should be "squishy"
